What You’ll Need:
1 cup sweet potato, boiled and mashed
1/3 coconut flour
1/2 cup shredded coconut
1/4 cup coconut nectar
1/4 cup vegan butter or ghee, melted
1 tablespoon powder sugar
What to Do:
Preheat the oven to 350°F.
Combine all ingredients together. Use your hands to form the dough into a ball. Place dough on parchment paper and flatten.
Use cookie cutters to cut your cookies in the shape of your choice.
Bake for 10-12 minutes and let cool. Decorate as desired! For these, I covered each cookie with marshmallows fluff and topped with shredded coconut, matcha-infused coconut, and sprinkles.
