Turkey meatballs are the new turkey.
What You’ll Need:
1 pound ground turkey
2 cups fresh blueberries
2 tablespoons maple syrup
1 tablespoon coconut oil
What to Do:
Preheat the oven to 350° and line a baking sheet with parchment paper.
In a large bowl combine the ground turkey and seasoning and mix well.
Take 1 tablespoon of turkey mixture and roll into a ball. Place on the baking sheet and repeat until all of the meat has been used.
Bake for 15 minutes.
While the meatballs cook, place a saucepan over medium to high heat and add the blueberries, maple syrup, and coconut oil.
Cook the blueberries until the mixture begins to boil, making sure to continue stirring to break up the berries and prevent them from sticking.
Reduce the heat and simmer for 5-10 minutes.
After 15 minutes in the oven, flip the meatballs and bake for an additional 15 minutes (option to bake for 10 minutes, and broil for the remaining 5 minutes).
Remove the meatballs from the oven and place on a separate plate. Top with the blueberry compote and serve.
