This is not your momma’s casserole!
What You’ll Need:
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon salt
What to Do:
Preheat your oven to 400°. Cover a cookie sheet with cooking spray.
Clean your potatoes and slice them into 1/2-inch rounds. Put them in a bowl and cover them with a drizzle of olive oil, sugar, cinnamon, and salt.
Place sweet potatoes on a cookie sheet and bake for 10-12 minutes. Flip and bake for an additional 5 minutes.
Add a marshmallow on top of each sweet potato slice. Broil for 30 seconds or until the marshmallow starts to brown.
Remove from the oven and add a pecan on top of each marshmallow. Serve as a side dish alternative to your traditional sweet potato casserole.
