What You’ll Need:
1 2/3 cups cake flour (can sub gluten-free baking flour)
1 1/4 cups granulated sugar
1/2 cup confectioners sugar
1/3 cup unsweetened cocoa or cacao powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 stick softened salted butter
2 room temperature eggs
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons red food coloring
What to Do:
Combine flour, cocoa/cacao powder, baking powder, and salt in a small bowl.
In a large bowl, beat granulated sugar, and softened butter on medium speed until fluffy. Add eggs, vanilla, and red food coloring and beat until fully combined. Slowly add flour mixture until fully incorporated. Cover bowl with plastic wrap and place in refrigerator for at least two hours. Overnight is ideal.
When ready to bake, pre-heat oven to 350°F. Place parchment paper on baking sheet so cookies do not stick. Shape cookies into 1-inch balls, cover completely in confectioners sugar, and place on cookie sheet. Make sure cookies are at least an inch apart so they do not collide when baking.
Bake for 8-12 minutes. Cookies should look puffed when they are done. Allow cookies to cool completely before enjoying!
