Wishing you a happy and tasty Pride Weekend with this bright sugar cookie topped with a rainbow of fruit. Swap in your favorite sweets like cherries or grapefruit segments for your own spin on this colorful cookie.
What to Do:
For the sugar cookie, preheat oven to 375°. Mix flour, baking soda, and baking powder and set aside.
Combine butter and sugar until smooth. Beat in the egg and vanilla.
Gradually blend in dry ingredients. If the dough is dry, gradually add in more butter until you can roll the dough smooth.
Cover a cookie sheet with cooking spray or parchment paper. Roll the dough into a half circle/rainbow shape. Bake 8-10 minutes or until golden brown.
As the cookie cools, start slicing your fruit. Depending on the size of the blackberries, you’ll need to cut off the tip so they lay flat on the cookie.
Cover your cooled cookie with vanilla Greek yogurt. Then, add the fruit, starting with strawberries on the outer edge and moving inward with oranges, kiwis, blueberries, and blackberries. Slice and serve!
