Paleo Pumpkin Porridge Recipe

November 9, 2017 by Amanda Hawkins

Recipe developed and shot by Ksenia Avdulova of Breakfast Criminals.

Processed with VSCO with a6 preset

What You’ll Need:
1/2 cup unsweetened coconut flakes or shreds
1/4 cup raw walnuts
1 tablespoon hemp seeds
1/2 cup milk of your choice
1/3 cup organic pumpkin puree
1/3 cup plain yogurt
2 tablespoons chia seeds
1 tablespoon maple syrup
1 teaspoon maca
1 teaspoon pumpkin spice
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground ginger

What to Do:
Load coconut, walnuts and hemp seeds into a food processor or blender, and pulse for approximately 30 seconds, until the mixture starts looking like steel cut oats. (You can use 1/2 cup of oats in place of this, but it is not paleo.)

Place your porridge mixture into a jar, then add the rest of the ingredients.

Mix really well.

Let it sit for at least 1 hour to overnight, until the chia seeds expand and the porridge is thick and creamy.

Serve cold or warmed up with your favorite toppings and a lot of love!
