It’s an easy-to-make summer favorite. And, it’s perfect to share at a barbecue or on it’s own for a tasty, colorful lunch.
What You’ll Need:
Barilla tri-color rotini
1 can quartered artichoke hearts
1 jar roasted red peppers, diced
Cherry tomatoes, diced
Black olives, sliced
Green olives, sliced
Fresh kale, chopped
1 half red onion, julienned
What to Do:
Boil water and add one package of tri-color pasta. Cook, drain, and let it cool. While the pasta is cooking, prep your ingredients: Slice tomatoes and peppers, julienne onions, cut pepperoni and salami, slice olives.
Combine all the ingredients in a large bowl and add a drizzle of Italian dressing.
