Melon, avocado, and prosciutto are three of our favorite things. So imagine our delight when our friends at Ziploc® sent us this delicious dip recipe. We think it’s at its very best eaten outdoors with a crispy baguette on a sunny afternoon, but the truth is we’d eat it any time, anywhere.
Lovers of salty-sweet flavors will be amazed by what happens when fresh melon and avocado are combined with delicious bites of prosciutto. Top with toasted pine nuts and a sweet balsamic drizzle…and just wait for the rave reviews to roll in.
What You’ll Need:
¼ ripe melon like honeydew or cantaloupe, finely chopped
2 ounces of prosciutto, sliced thinly
½ avocado, pitted and peeled, finely chopped
¼ cup of pine nuts, toasted
¼ cup of balsamic vinegar
What to Do:
Step 1: In a bowl, combine melon with prosciutto and fold in avocado.
Step 2: In a small saucepan, heat balsamic vinegar on medium high heat and boil until it reduces by half and coats the back of a spoon.
Step 3: Top dip with toasted pine nuts, and a drizzle of the balsamic reduction from the saucepan.
