What to Do:
Preheat your oven to 350°.
Wash your potatoes and slice the top off. Use a spoon or fork to scoop out enough potato flesh so an egg can fit inside.
Drizzle with olive oil and add freshly cracked salt and pepper. Crack an egg inside each hole, careful not to overflow.
Bake for 20 minutes. Remove the potatoes and add chives and cheese. Bake for another 5 minutes and serve.
