What You’ll Need:
1/3 cup vegetable oil
1/4 cup apple cider vinegar
2 tablespoons maple syrup
4 teaspoons Dijon mustard
1/2 medium red onion
1 small head green cabbage
3/4 cup sliced almonds
3/4 cup dried cranberries
3/4 cup fresh parsley
Salt and pepper

What to Do:
Make your dressing by whisking vegetable oil, apple cider vinegar, maple syrup, Dijon mustard, pinch of salt, and chopped red onion into a bowl. Set aside.

Roughly chop your cabbage, slice your almonds, and chop your parsley. Combine cabbage, almonds, dried cranberries, parsley, and a pinch of salt and pepper into a bowl.

Cover with dressing, top with more dried cranberries and almonds, and serve.
