Ain’t no party like a pizza party because a pizza party has… pizza.
If you’re a fan of thin crust pizza, it’s time to ditch the bread and welcome this alternative. It’s crispy just like your regular pizza crust, but is a better-for-you alternative made with super trendy cauliflower “rice.” We chose sweet tomatoes and fresh basil to top our ‘za, but add in your fave toppings for a pizza night that everyone will be talking about all week long.

What You’ll Need:
1 container cauliflower rice (approximately 2 1/2 cups)
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
Salt and pepper
Red pepper flakes
Fresh basil leaves
What to Do:
Pre-heat the oven to 450°.
Combine cauliflower rice with the egg, 1 cup of shredded mozzarella cheese, 2 tablespoons of parmesan cheese, salt, and pepper.
Spread flat onto a greased cookie sheet into a thin layer. Bake for 12-15 minutes.
While the crust bakes, slice 1 cup of grape tomatoes in half, slice basil, and combine the remaining cheeses (1 cup of mozzarella and 2 tablespoons of parmesan).
When the crust is golden brown, remove from the oven. Depending on how saucy you like your pizza, cover the cauliflower rice crust with a layer of tomato sauce. Top with remaining cheeses and sliced grape tomatoes and bake for another 5 minutes.
When the pizza is done, sprinkle fresh basil and red pepper flakes. Slice and serve!
