Next-Level Banana Bread

What beats toast? Banana bread toast. Always.

Toasting to this next-level banana bread toast! Not only is it a quick and delicious breakfast or dessert, the mascarpone and espresso topping takes care of your coffee fix. You can’t buy happiness but you can buy this next-level banana bread toast. And that’s pretty close.

What You’ll Need:
1 Banana bread
3/4 cup mascarpone
Pine nuts
2 tablespoons espresso powder
1/2 cup confectioner’s sugar
1/2 cup whipped cream

What to Do:
To get started, mix mascarpone and espresso powder in a a large bowl. Slowly add sugar until soft peaks form. Then, using a spatula, add 1/4 of the whipped cream to lighten the mixture.

After your mixture is done, pre-heat your oven to 375° and bake your pine nuts for about 5-10 minutes. Make sure to occasionally stir them while they are baking!

Now that all your toppings are done, cut your banana bread into 1-inch thick slices. Top each slice with the mascarpone mix and the toasted pine nuts. Breakfast is served!
