What to Do:
To get started, mix mascarpone and espresso powder in a a large bowl. Slowly add sugar until soft peaks form. Then, using a spatula, add 1/4 of the whipped cream to lighten the mixture.
After your mixture is done, pre-heat your oven to 375° and bake your pine nuts for about 5-10 minutes. Make sure to occasionally stir them while they are baking!
Now that all your toppings are done, cut your banana bread into 1-inch thick slices. Top each slice with the mascarpone mix and the toasted pine nuts. Breakfast is served!
