For the eighth day of the 12 days of cookies, we’re sharing a recipe from Jay at Chop Happy that’ll wow anyone who thinks that the best part of making cookies is actually sneaking bites of dough (we’re guilty as charged).
From Jay: I make this recipe for my holiday cookie parties, but always make some more for my husband Tom because it makes him smile every time. Since I am baking challenged, these are no bake cookies. These s’mores cookie dough bites are filled with rich chunks of chocolate, sweet brown sugar and fluffy marshmallow love. The best part is they are totally make ahead: I make them 4 days in advance and leave in my fridge until cookie time. My secret ingredient is almond flour. Besides being gluten free (so everyone can eat them), it also adds a fun nutty taste. Cheers to cookies that celebrate you!
S’mores Cookie Dough Bites
What You’ll Need
2 sticks (8 oz) butter, at room temperature
1 cup almond flour
1 1/2 cups brown sugar
2 teaspoons vanilla extract
1 teaspoon salt
2 tablespoons heavy cream
1/2 cup milk chocolate chips
1/2 cup mini marshmallows
2 graham crackers, broken into chunks (regular or gluten free)
What to do:
Mix together the butter, almond flour, brown sugar, vanilla, salt, and cream until completely combined and a firm dough forms.
Stir in the chocolate chips, marshmallows, and graham crackers and gently mix everything together.
Divide and shape dough into small balls. Enjoy right away or refrigerate for 30 minutes to allow the flavors to mesh.
Cookie dough can be frozen for up to 6 months.
