For the eleventh day of the 12 days of cookies, we’ve got a recipe from Jordan of Pricklyfresh that has a delicious twist: gluten-free snickerdoodles!

Makes about 25 Cookies
What You’ll Need:
1/2 cup grass-fed butter, softened
1 1/4 cups coconut sugar, divided
1/2 tablespoon vanilla extract
2 cups all-purpose almond flour
2 tablespoons gluten-free flour
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon cinnamon
What to Do:
Preheat oven to 350 F.
In a small bowl, mix together butter and 1 cup coconut sugar until well-combined and pale in color. Mix in egg & vanilla. Stir in almond flour, gluten-free flour, baking soda and salt until combined.
Using a tablespoon scoop, roll dough into balls and set aside.
In a small bowl, combine cinnamon and remaining coconut sugar. Roll each dough ball in the mixture and place on a baking sheet about 2 inches apart.
Bake until edges are golden, about 10 minutes.
