Choose a meal-sized salad

The One-Day Fresh Food Challenge

I challenge any willing takers to prove to yourself and those around you (I’m looking at all you role models out there!) that eating healthfully is possible, delicious and feels great.

Keep reading for the reasons why a One-Day Fresh Food Challenge is important, and my meal and snack ideas to get you started.

Why am I asking you to focus on just one day? As sure as a journey of 1,000 miles starts with a single step, the diet to get to 100 years starts with a single bite.

Most of us need to make changes to the way we eat; many of us want to; and change is hard. So simply getting started is a big part of the battle!

On the bright side, healthy habits are habits too, and they’re just as challenging to break once they make their way into our daily lives.

Why not get started today? With your next bite?

I challenge you to spend one day this week (today is as good a day as
any!) to take my fresh food challenge: make fresh fruits and vegetables a major part of every meal and snack. You could do anything for a day, right?

With so much luscious fresh food in season right now, it’s easier than ever to say yes to some of the healthiest foods around — fresh fruit, vegetables and seafood.

Here are some of my favorite ways to eat fresh foods all day long:

Breakfast
A fruit salad (with slices of nectarines, strawberries and blueberries), topped with almonds.

Mid-morning Snack
Sweet bell peppers and homemade hummus… OR
A packet of a instant oatmeal with a spoonful of peanut butter mixed in, topped with a generous handful of berries

Lunch
Choose a meal-sized salad. I like FreshDirect green salads with whole grains, and my favorite is the brown rice and pistachio green salad. The quinoa salad is also great.

Afternoon Snack
Handful of pistachios and an apricot

Dinner
A salad of lentils, wild Alaskan salmon, tomatoes, kale or fresh lettuce, cucumbers, carrots, bell peppers, tomatoes and skinless chicken breast (shortcut: buy a rotisserie chicken, remove skin, tear off bite-sized pieces for salad)

Dessert
Bowl of fresh berries

Late Snack
Peanut butter and celery
