Just Desserts: Pat’s Fast & Fancy Fruit Tarts

I can’t wait for my meal to end. I don’t want my guests to leave — I just want dessert.

Serve up prime rib and my mind is craving cookies. Give me baked potatoes and I’m daydreaming about créme brulee.

In fact, if I could skip the entire meal and munch my way from muffins to pound cake, I would be in heaven. But some people, (my husband and son) actually like eating the entire meal.

With our family’s busy schedule, any dessert to be enjoyed has to be quick and easy, but decadent enough to pass my rigorous crave test. Behold the wonder of frozen puff pastry!

Pat’s Favorite Fast & Fancy Fruit Tarts
Total time: 15 minutes prep, 12 minutes cooking
Yield: 9 pieces

1 box of Frozen Puff Pastry Sheets
10-12 apple slices (or your favorite sliced fresh fruit)
1/2 cup confectioners’ sugar
1/2 cup cinnamon
1/2 cup peach preserves (or your favorite fruit preserves)

1. Preheat oven to 350°F.
2. Remove pastry from box and thaw according to directions.
3. Prepare a well floured surface and roll pastry out to a 12″ x 12″ square of desired thickness.
4. Using a sharp pastry knife, cut pastry into nine 3″ squares.
5. Separate squares and place on an ungreased cookie sheet.
6. Prick pastry with a fork.
7. Coat each square with preserve mixture and top with apple slices.
8. Sprinkle on cinnamon and confectioners’ sugar.
9. Bake at 350°F for 10-12 minutes, or until the apple slices are tender and the pastry is golden brown.

In just ten minutes, a warm and delicious fruit tart is ready without the work and waiting.

Don’t worry if someone prefers pears to apples (like my husband). There’s no problem adjusting this recipe. Just substitute your favorite fresh fruit and whatever preserves you like to customize this treat.

With such super-simple directions, I can work all day, pull together a dinner for friends and create this luscious dessert.

I always get rave reviews about “my fabulous fruit tart” so I can’t help but say, “It’s terribly complicated but you are so worth the effort!”

Although family dinners and brunch are the perfect stage for this show stopper, I like to make it anytime for a fun treat.

To add the finishing touch, serve this pastry with whipped cream or sliced almonds on top, and I bet even your most regimented balanced meal eater will demand to eat their dessert first, from now on.
