Mixed Berry Fool & Apple-Quince Fool

Two Irresistible April Fools

April fools? No trickery here!

The fruit fool is an old English dessert that was traditionally made with layered gooseberries and custard — very much like a trifle without the sponge cake layers.

Both delicious and easy to make, the fool is a light, fruity dessert that’s ideal for serving after a spring dinner.

To allow the sweetness of the preserves shine through, we’ve made our two fool recipes with just a touch of added sugar in the freshly whipped cream (and you could even omit the sugar entirely if you enjoy a less-sweet dessert).

That said, if you’re too pressed for time to lift a whisk, you could also substitute a pre-whipped cream or a whipped topping like Cool Whip.

Ingredients
1/2 teaspoon butter
2 medium apples, peeled and cut into 1/4″ slices
1 cup heavy cream
1 tablespoon granulated sugar
1/4 cup mascarpone or crème fraîche
1/2 cup quince preserves
1 dash ground cinnamon (for garnish)
4 vanilla wafers, graham crackers or small shortbread cookies (for garnish)

Preparation:
1. Melt the butter in a medium-sized sauté pan over medium-high heat. Add the apple slices to the pan and sauté until softened, then remove the pan from the heat and allow the apples to cool.
2. Pour the whipped cream into a large bowl, add the sugar and vigorously whisk the mixture until soft peaks form. Fold in the mascarpone or crème fraîche.
3. Mix the quince preserves with the apple slices and allow the mixture to cool completely.
4. Divide the cooled quince mixture in half. Spoon half of the quince-apple blend evenly into the bottoms of four sundae glasses or deep wine glasses. Fold the other half into the whipped cream mixture.
5. Layer the cream mixture into each glass atop the quince-apple blend, then sprinkle each glass with cinnamon, garnish with vanilla wafers or shortbread cookies and serve immediately.

Ingredients:

1/4 cup mascarpone or crème fraîche
1 cup (about a half-pint) of raspberries, blackberries or blueberries
1/2 cup berry preserves
4 vanilla wafers, graham crackers or small shortbread cookies (for garnish)

Preparation:
1. Pour the whipped cream into a large bowl, add the sugar and vigorously whisk the mixture until soft peaks form. Fold in the mascarpone or crème fraîche.
2. Mix the berry preserves with half of the fresh berries.
3. Spoon half of the berry preserves mixture evenly into the bottoms of four sundae glasses or deep wine glasses. Fold the other half of the preserves mixture into the whipped cream mixture.
4. Layer the cream mixture into each glass atop the mixed berry blend, then sprinkle each glass with additional berries, garnish with vanilla wafers or shortbread cookies and serve immediately.

Once you have the basic recipe, you can make fools with just about any soft fruit you enjoy. Bananas, pears, mangoes, guavas and papayas all make delicious fillings for fools.
